Bacon and Cheddar Cornbread

Our summer has been filled with vacations, swimming at the local pool, playing at our neighborhood park, and barbecuing in our back yard.

With summer winding down and the start of school mere weeks away, I wanted to have a barbecue feast to celebrate one last time. For this barbecue though, I wanted the sides to be as exceptional as my husband’s smoked brisket.

This barbecue was going to be more than just brisket, sausage, and barbecue sauce. In addition to the meats, we made pinto beans, a chilled strawberries and cream dessert, and cornbread muffins.

I wanted to make these cornbread muffins to accompany my husband’s barbecue and pinto beans. However, I wanted them to be more than just a side of cornbread.

I thought of how to make the cornbread muffins more savory so to compliment the BBQ brisket and sausage. I thought the best way to do so was to add bacon and cheese to the cornbread mix.

*Why the box of ready-made mix you ask? As busy moms, sometimes it’s hard to make everything from scratch. While I make most of my cornbread recipes from scratch, there are times when I don’t have the time or ingredients and need a ready-made box on hand!

The salty, crispy bacon paired with shredded cheddar cheese was the perfect combination for my cornbread muffins. The muffins maintained the sweet, crumbly flavor that Simply Homemade cornbread is known for, yet it also offered the hint of bacon and cheese in every bite.

The muffins paired perfectly with the savory, smoky barbecue and added that hint of sweetness expected from cornbread.

The Bacon and Cheddar Cornbread muffins were very easy to make.

Bacon and Cheddar Cornbread

Ingredients:

Directions:

Preheat oven to 375 degrees.

Following the instructions on the box, mix the cornbread mix with the milk, butter, and eggs. Set aside.

Fry 4 strips of bacon until crispy. Allow bacon to cool.

Cut the bacon into bits, and fold into the cornbread mix along with the cup of shredded cheddar cheese.

Spoon the bacon & cheddar cheese cornbread mix into 12 silicone muffin cups and bake for 16 minutes.

Once cool, the Bacon and Cheddar Cornbread muffins were the perfect addition to our barbecue, sausage, and pinto beans.

In the morning, our left over Bacon and Cheddar Cornbread muffins made for an effortless breakfast. My kids had the Bacon and Cheddar cornbread muffins with a glass of cold milk, while my husband and I had them with a hot cup of coffee.
