    The fall season is my favorite time of year.

    I love everything about fall, including the yummy smells, anything and everything pumpkin, football season, cooler temps, and delicious food.

    This is also the time of year where I actually cook more. There’s something about the fall season that motivates me to get into the kitchen more and cook up delicious dinners for my family.

    I was born and raised in the country and I’m still a country girl at heart. Every now and then, I crave a good ol’ southern style dinner.

    This includes chicken fried steak, mashed potatoes and gravy, glazed carrots, corn on the cob, green beans, hot rolls, and sweet tea — and I want all of that.

    The other night, I cooked our family a southern style dinner that included all of the above and it was delicious.

    These Maple Glazed Carrots were included and I thought I’d share this easy recipe with you here.

    They are super easy for busy moms to make and perfect for the kids to eat, too!

    There are lots of reasons to make maple glazed carrots.

    For one, they’re absolutely delicious. But maple glazed carrots are also healthy and nutritious, packed with vitamins and minerals that are good for you.

    Maple glazed carrots are easy to make, too. All you need is a few simple ingredients and a little bit of time.

    What can you use to glaze carrots?

    One popular ingredient to use when glazing carrots is maple syrup. This is what we use to glaze the carrots in this recipe.

    This gives the carrots a nice, sweet flavor that pairs well with many other dishes.

    Another option is to use honey as your glaze. This will also result in a sweet carrot, but with a slightly different flavor profile.

    If you’re looking for something a little savory, you can try using balsamic vinegar or soy sauce. These two options will give your carrots a bit of extra flavor without making them too sweet.

    More ways to glaze carrots include using ingredients like cinnamon, orange, ginger, BBQ sauce, ketchup, sweet and sour sauce, Sriracha, Wasabi, and more!

    Plus, they make a great side dish for any meal. So why not give them a try? You might just be surprised at how much you love them!

    What can you pair with maple glazed carrots?

    Maple glazed carrots are a delicious and easy side dish. Here are more ideas of what to serve them with:

    • Roasted chicken or turkey
    • Mashed potatoes
    • Green beans
    • Steamed broccoli
    • Salad
    • Baked fish
    • Rice pilaf
    • Mac and cheese

    Can I use canned carrots?

    If you want to save time, you can use canned carrots in place of fresh carrots. The cooking time will be reduced significantly since the carrots are already softened.

    Maple Glazed Carrots

    Ingredients:

    Directions:

    1. Wash carrots well. Cut the ends of the carrots and discard.

    2. Slice carrots into thin rounds.

    3. Place carrots in a medium saucepan and cover with water.

    4. Bring carrots to a boil and allow to boil for about 15-20 minutes or until carrots are tender.

    5. Drain water with a colander.

    6. Add 1 tbsp. of maple syrup and 1 tbsp. of butter and stir well until butter is melted and carrots are covered with a thin glaze.

    If desired, sprinkle some brown sugar on top of the carrots.

    Serve and enjoy!

    The maple glaze adds a bit of sweetness to the carrots. Combined with the butter, this is a delicious side dish to eat any day of the week!

  • Aluminum Can Pumpkin Craft

    Create an Aluminum Can Pumpkin Craft this fall season to display in your classroom or home!

    Wait!

    Don’t throw out your aluminum cans from dinner tonight!

    Instead, wash them well, set aside to dry, and then create these adorable aluminum can pumpkins with them!

    Mason Jar Pumpkin Craft

    This is a great way to get the kids involved with decorating the house this year.

    Create a variety of different sizes and make a pretend pumpkin patch with your pumpkins if desired!

    Supplies:

    Directions:

    *If you are creating this craft with children, adult supervision is recommended!

    Turn the empty aluminum can over and place on a paper plate.

    Paint the aluminum can orange. Set aside to dry. You do not need to paint the inside of the can.

    Paint another coat on the tin can. Set aside to dry. *Paint more coats as needed.

    Use hot glue to attach the pumpkin stem and leaves to the top of the pumpkin. 

    Display your pumpkin this fall season!

    Instructions

    If you are creating this craft with children, adult supervision is recommended!

    One of my favorite pumpkin filled treats is this cool and creamy pumpkin spice dip!

    It has a smooth and creamy texture that goes great with graham crackers, ginger snaps or homemade cinnamon and sugar tortilla chips. You can find the recipe for the chips at the bottom of this post.

    My girls have been begging me to make more of this fall yumminess. During a day off from school this last week, they helped me whip up a batch of this yummy dip!

    This dip is perfect for holiday gatherings or for a dessert after Thanksgiving dinner. It’s like eating pumpkin pie without all of the baking and crust preparation.

    I’m sure this recipe will satisfy your pumpkin spice cravings this year!

    Pumpkin Pie Spice Dip

    Ingredients:

    Directions:

    1. Whip cream cheese, cool whip, and pudding mix with hand mixer until smooth.
    2. Stir in pumpkin, cinnamon, and pumpkin spice.
    3. Chill in refrigerator until serving time.

    Tip: For a warm dip, microwave for about a minute before serving. Serve pumpkin pie spice dip with these cinnamon sugar chips below!

    Ingredients:

    • 12 flour tortillas
    • 3 tbs. melted butter
    • 2 tbs. cinnamon sugar mix

    Directions:

    1. Preheat oven to 400 degrees.
    2. Using a pizza cutter (or knife), cut flour tortillas into triangle.
    3. Spread triangles on a cookie sheet lined with parchment paper.
    4. Drizzle melted butter and cinnamon sugar mix over triangles and lightly toss.
    5. Spread evenly on pan and bake for 10 mins. or until golden brown.

    Service the chips with the pumpkin pie spice dip!

    Ingredients

    • 4 oz. softened cream cheese
    • 1 cup canned pumpkin
    • 1 (5 oz.) box instant vanilla pudding mix
    • 1 cup cool whip
    • 1/4 tsp. ground cinnamon
    • 1 tsp. pumpkin spice
    • 1 tsp. brown sugar (optional garnish)

    Instructions

    Whip cream cheese, cool whip, and pudding mix with hand mixer until smooth.

    Stir in pumpkin, cinnamon, and pumpkin spice.

    Chill in refrigerator until serving time.

    scrub

    Directions:

    Mix all ingredients together well.

    Store in a mason jar or glass jar with clamp lid.

    Toasty Cinnamon Pumpkin Pie Recipe

    This is the season of spices! Cinnamon is one of my FAVORITE spices during the fall season and it’s a spice that I include in several fall recipes. I recently thought about creating a fall pie using a cinnamon toasted cereal. This would give my daughter and I a chance to bake together in the kitchen with one of her favorite kinds of cereal! Baking together in the kitchen is one way I can spend undivided attention with her during the day. I highly recommend having your children get involved in cooking projects with you! It’s fun and quite the learning experience for them.

    For this particular fall recipe, we decided to create a Toasty Cinnamon Pumpkin Pie Recipe. Follow below for the ingredients and recipe!

    My daughter was excited to help out with everything including opening the cans with a can opener and cracking the eggs! We did lose one egg in the process as we watched it slip and drip all over the floor, but luckily we had one back-up egg and she cracked it like a champ.

    After we finished with the messy part, our pie was ready to bake. Once the pie was ready, it was hard to wait to let it cool. I was ready to enjoy a piece of this deliciousness that my daughter and I made together! You may be asking the question, "Can you bake a graham cracker crust?" I had that same question too, but after searching around online, the answer is yes. While I have never tried making or baking my own graham cracker crust in the past, this recipe did in fact turn out delicious. My husband tried a piece (he's our taste tester) and he was impressed! pumpkin-pie-3 While flour crusts are typically used to make pumpkin pie, the graham cracker crust is one you should give a try this fall. We liked the flavor and the crumbly texture once the pie was cooled, along with a spoonful of whipped cream and a pinch of cinnamon on top! cinnamon-pumpkin-pie Toasty Cinnamon Pumpkin Pie Recipe Ingredients: Crust:

    • 1 pkg. graham crackers (9 cracker sheets)
    • 2 cups cinnamon toasted cereal
    • 1/3 cup sugar
    • 1 stick of butter
    Pumpkin Pie Filling:
    • 2 eggs slightly beaten
    • 3/4 cup sugar
    • 1/2 tsp. salt
    • 2 tsp. pumpkin pie spice
    • 1 12 oz. can evaporated milk
    • 1 15 oz. can pumpkin
    Optional topping:
    • Whipped cream
    • Cinnamon
    Crust Directions:
    1. Combine graham crackers and toasted cinnamon cereal in a one gallon resealable zipper bag. Close the bag.
    2. Use a rolling pin (or a can of food) to break up the mixture into fine crumbs.
    3. Add the sugar into the bag and mix together well.
    4. Melt butter in a large glass mixing bowl.
    5. Pour the mixture into the butter and stir well. Mixture will be crumbly and moist.
    6. Press mixture into pie plate until a crust is formed.
    7. Set aside.
    Pumpkin Pie Filling:
    1. Preheat oven to 425 degrees.
    2. Combine all pumpkin pie filling ingredients together in a mixing bowl and stir well.
    3. Pour mixture slowly into the cinnamon graham cracker crust and fill to the top.
    4. Bake for 15 minutes on the bottom oven rack.
    5. Lower the temperature to 350 degrees.
    6. Bake for 40-50 minutes, or until a knife inserted in the middle comes out clean.
    7. Allow to cool before serving. Optional: Add whipped topping and a dash of cinnamon.
