Our summer has been filled with vacations, swimming at the local pool, playing at our shady neighborhood park, and barbecuing in our back yard. With summer winding down and the start of school mere weeks away, I wanted to have a barbecue feast to celebrate one last time. For this barbecue though, I wanted the sides to be as exceptional as my husband’s smoked brisket. This barbecue was going to be more than just brisket, sausage, and barbecue sauce. In addition to the meats, we made pinto beans, a chilled strawberries and cream dessert, and cornbread muffins.

I wanted to make these cornbread muffins to accompany my husband’s barbecue and pinto beans. However, I wanted them to be more than just a side of cornbread. I thought of how to make the cornbread muffins more savory so to compliment the BBQ brisket and sausage. I thought the best way to do so was to add bacon and cheese to the sweet flavor of Fleischmann’s Simply Homemade cornbread mix.

The salty, crispy bacon paired with shredded cheddar cheese was the perfect combination for my cornbread muffins. The muffins maintained the sweet, crumbly flavor that Simply Homemade cornbread is known for, yet it also offered the hint of bacon and cheese in every bite. The muffins paired perfectly with the savory, smoky barbecue and added that hint of sweetness expected from cornbread.
